Thoughts on video card...

I've heard the 9xxx series ended up being pretty crappy.

Go for the 260. The 280 is not worth the money, but the 260 is a rock-solid card.

Thoughts on memory...

I would probably bite the bullet and get the 4gb.

Reasoning: Do you really want to have to buy 2x512mb chips? Keeping dual-channel is a must, and this just seems silly.

Memory is so cheap these days, getting 4x1gb or 2x2gb is nothing. Plus, it's not really 'wasting' because you still do get to use a good chunk of the extra memory.

As far as comments about the cases... the Antec 1200 is overkill, and to be honest, not worth the extra $80 over the 900, so I would rule that one out right away.

The p182 is solid case.

The 900 does have the handy little tray on top, and some pretty easy access for usb ports, etc in the front.

I'd say it's a toss-up between those two. One is more sleak, the other is more convenient.
